I was having a craving for frozen French bread pizza from the old days before I was vegan and gluten free. I realized that vegan french bread pizza or even gluten free french bread pizza probably do not exist.

The chances of both a vegan and gluten free frozen french bread pizza existing were slim to none. Not to mention where would I find a healthy pizza free of cane sugar, high fructose corn syrup, and a lot of things most people cannot pronounce.

Then I came up with an idea: What if I created my own vegan gluten free pizza from simple ingredients? And it didn’t even have to be frozen (it can be frozen for storage). It can be fresh and amazing!

I started gathering the items I needed like gluten free baguette bread, vegan mozzarella cheese, and the ingredients I needed to make my own sauce. The results were better than I had hoped for! Nearly identical to frozen French bread pizza, but so much healthier.

I decided to use Schär gluten free baguette in the long package because it was the closest to French bread pizza crust that I could find. It is also a vegan baguette so it checked all the boxes for my diet.

They also make a smaller baguette as well so that will work if it’s all you can find. You can also get creative and use gluten free hot dog rolls or gluten free ciabatta bread too.

BAKE THE BREAD BEFORE YOU START ADDING SAUCE AND TOPPINGS! I cannot scream this loud enough. I did not pre-bake the bread on the first batch I tried and it was a soggy mess.

It’s because gluten free bread is very fragile and it falls apart when it gets wet. The point of baking it first is to make the gluten free pizza crust crunchy and delicious, just like the comforting frozen French bread pizza we remember from growing up.

After baking the bread, I added homemade vegan pizza sauce. Jarred pizza sauce would be fine but I just do not like overly processed food. I also do not trust all ingredients in the jar to equate to gluten free pizza sauce.

I used Miyoko’s Liquid Mozzarella for vegan mozzarella cheese that melts and bubbles. I add the sauce first, the I crumbled up some Beyond Meat Breakfast Sausage Patties, and topped it with Miyoko’s Creamery Revolutionary Liquid Vegan Pizza Mozzarella.

You could use any kind of vegan shredded mozzarella cheese like Follow Your Heart brand or Violife. I just love the Miyoko’s cheese because it’s gluten free and has cultures in it.

Without further ado, here is the comforting recipe that brought back memories of my old diet:

Ingredients:

  • 1Package of Schar gluten free baguette bread in the long package

  • 1 Pot of homemade pizza sauce or 1 jar of store bought sauce

  • 1 Container of Miyoko’s Liquid Vegan Pizza Mozzarella or any vegan mozzarella of your choice

  • 2 Beyond Beyond Meat Breakfast Sausage Patties or any brand of your choice

  • 1 Tablespoon of oregano

  • 1 Tablespoon of parsley

Homemade Pizza Sauce:

2 cans of stewed tomatoes puréed
1 Tablespoon of dried basil or 4-5 fresh basil leaves
1/2 Tablespoon of salt
3-4 Cloves of diced fresh garlic

Directions:

  1. Preheat oven to 400° Fahrenheit/ 204° Celsius

  2. Bake bread for 8 minutes (you can brush with olive oil prior to baking for crispier results)

  3. Remove bread from oven and spoon on enough pizza sauce to cover each crust

  4. Sprinkle oregano over each pizza

  5. Chop up vegan sausage or whichever topping you prefer and crumble onto each pizza

  6. Add vegan mozzarella cheese to top

  7. Finish with parsley

  8. Bake for 8-10 minutes (keep an eye on it so the crust doesn’t burn)

  9. Serve immediately, wrap leftovers in foil and freeze for later
